Famous Daves Cornbread Muffins

I love the sweet cornbread muffins from Famous Daves. I searched for a copycat recipe and tried the following. These were good and somewhat close but I think you need to add more butter, really grind the cornmeal and maybe add some greek yogurt or sour cream to try and get these a little more moist. Otherwise they were pretty good and would go great with chili or barbeque. I think the secret is the honey that is added that really turns cornbread into a sweet treat. Enjoy!

1 3/4 cup cornmeal

1 1/2 cup flour

2 tsp baking powder

3/4 tsp salt

1/4 tsp. baking soda

2 eggs

3/4 cup sugar

1/4 cup shortening

1/2 tsp vanilla extract

3/4 cup whole milk

1/4 cup buttermilk

1/3 cup vegetable oil

4 Tb. honey

Preheat oven to 400 degrees. Grind the cornmeal in a food processor until it becomes fine like flour. Pour cornmeal, flour, baking powder, salt and baking soda into a large bowl and mix. Use a mixer to cream together the eggs, sugar, shortening and vanilla. Pour the wet ingredients into the dry stuff and add the remaining ingredients. Stir together until smooth. Line a 12 cup muffin pan with paper muffin cups. Fill each muffin cup 3/4 full with batter; then bake the muffins for 18 minutes. Remove from the oven and lather with butter on top of each roll. Makes 12-16 muffins.
